Ingredients
- 2 ripe bananas, mashed
- 1/2 cup peanut butter (You can also use almond butter)
- 2 eggs
- 2 tbsp honey
- 2 eggs
- 1 tsp Javy Coffee Concentrate
- 1/2 cup almond flour
- 2 tbsp dark cacao powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp sea salt
- 1/2 cup almond dark chocolate bar, chopped
Directions
- Preheat oven to 350 degrees F and place liners in the muffin tins
- Whisk together the bananas, peanut butter, eggs, honey, vanilla, and coffee concentrate until smooth
- Add in the almond flour, cacao powder, baking soda, cinnamon, and salt. stir until combined
- Fold in the chocolate chunks
- Scoop the batter into the muffin tins. top with more chocolate chunks and sprinkle of sea salt (optional)
- Bake for 18-20 minutes until a knife comes out clean when inserted in the middle. Let cool before enjoying!
