We like topping it with bananas and chocolate chips, but you can also go classic with butter and maple syrup and any fruit you’d like.

Ingredients
- 1 tbsp of Javy Coffee Concentrate
- 1 banana
- 75g oats
- 3 large eggs
- pinch of cinnamon
- 2 tbsp protein powder (whey, pea or whatever your preference)
- 1 tsp cacao powder
- 2 tbsp plant based milk
- a handful of dark vegan choc chips
- Coconut oil or cooking spray for frying
For the toppings
- 1/2 cup Greek or plain yogurt mixed with 1/2 tsp Javy coffee concentrate
- Caramelized banana, cacao nibs, and a dusting of cacao powder
Directions
- Whizz the banana, oats, eggs, milk, baking powder, cinnamon, cocoa powder, Javy coffee concentrate, and protein powder in a blender for 1-2 mins until smooth. Check if the oats have broken down, if not, blend for another minute. Transfer batter to a bowl and fold in chocolate chips.
- Scoop about ⅓ cup batter onto a hot pan prepared with coconut oil and cook on medium heat for 2-3 minutes per side.
- Repeat for the remaining pancake batter.
- Create the pancake stack by adding a bit of the coffee yogurt until you have a small tower of pancakes. Top with bananas and cacao nibs, and cacao powder if desired and enjoy warm.
