Ingredients
To make the cookie:
- 1 2 /3 cups flour
- 1 1/2 Tsp baking soda
- 1/2 Tsp salt
- 1 Tsp Javy Coffee Concentrate
- 2/3 cup unsweetened cocoa powder
- 3/4 cup water
- 1 cup sugar
- 1/2 cup butter
- 1 egg
- 1 1/2 Tsp vanilla
To make the frosting:
- 2 cups powdered sugar
- 3/4 cup butter
- 1/2 Tsp Javy Coffee concentrate
- 1 1/2 Tsp vanilla
Directions
- Preheat oven to 350-degree lime cookie sheets with silicone mats or parchment paper.
- Beat sugar, butter, Javy Coffee Concentrate, and an egg together in a large bowl with an electric mixer until light and fluffy.
- Sift flour, cocoa, baking powder, baking soda, and salt together in a separate bowl; add to the sugar mixture in batches, alternating with water, beating briefly after each addition until smooth. Stir in vanilla. Drop 2 tablespoons of batter or use a cookie scoop for each cookie, placing them 2 inches apart onto the prepared baking sheets.
- Bake for 10-12 minutes. Transfer to a wire rack and allow to cool completely.
- To make the filling, beat powdered sugar, butter, and Javy Coffee Concentrate in a large bowl with an electric mixer until light and fluffy. Stir in vanilla.
- Choose 2 cookies of the same size; spread a thick layer of filling on the flat side of one cookie; top with the remaining cookie. Repeat with remaining cookies and frosting.
